What food waste really costs
a restaurant or hotel.

Once food residues land in the bin, their cost is only beginning. At EU level the estimates are drastic: the market value of wasted food is put at around €132 billion a year, and collection and disposal alone at a further ~€9.3 billion (a European Commission estimate reported by the European Parliament). Total quantities are not falling: 58.2 million tonnes of food were wasted in 2023, about 130 kg per inhabitant (Eurostat).

For an individual kitchen, that cost hides in five lines that accounting rarely adds up together:

1. Purchase value of what is thrown away

Everything paid to suppliers that ended up in the bin — the largest and least visible item. Tracking quantities by type (preparation, plate, expiry) is the first step of any saving.

2. Hauling and disposal

Bin rental, price per emptying or per kilogram, collection frequency. Prices depend on the local contractor and rise as regulation tightens — separate-collection obligations are spreading across Europe (France since 2024 for everyone; England from 2027 for even the smallest firms).

3. Staff hours

Carrying, decanting and washing bins, waiting for pickups, keeping records — hours paid every month that appear on no price list.

4. Floor space and hygiene

A chilled or separate bin room is space that earns nothing; odours and pests are an operational risk with inspectors and guests.

5. Regulatory risk

Directive (EU) 2025/1892 commits Member States to a 30 % per-capita reduction by 2030 in retail and consumption — national implementing rules arrive in 2026–2027 and will pass the burden to kitchens. Whoever measures and reduces residues today pays no fines and makes no panicked adjustments tomorrow.

What disappears with treatment at the point of origin

On-site aerobic digestion directly cuts lines 2–4: the mass is broken down where it is produced, so food-residue hauling, bin-room space and the hours tied to them disappear or shrink to a minimum. There is no need to guess what that amounts to for your kitchen — enter your volumes and local prices into our sizing calculator and you will get the savings and payback calculation for a specific digester model.

Note on method: the EU figures are estimates by the institutions named (Eurostat; European Commission / European Parliament — a single institutional source); your actual cost depends on local contractor prices and kitchen structure — so calculate with your own data, not with averages.
